An amazingly delicious low-carb guacamole to enjoy with, for example, Mexican food! It only takes a few minutes to make and is well worth the effort.

Ingredients, 4 servings
2–3 ripe avocados
1–2 garlic cloves
1 lime, juiced
2 tablespoons olive oil
½ white onion, finely diced or grated
½ cup fresh cilantro, finely chopped
1 tomato, diced and de-seeded
salt and pepper to taste
Instructions
Peel the avocados and mash with a fork, grate or chop the onion, squeeze the lemon and pour in the juice.
Add tomato, olive oil and finely chopped cilantro. Salt and pepper and blend well.
