Mexican Scrambled Eggs

Do you want more inspiration for your strict low-carb breakfast? Here’s a great spicy start of the day! A wonderful mix of creamy scrambled eggs and a fresh taste of spicy jalapeños.
Mexscramble
Difficulty: Easy
Cooking time: 10 min.
Preparation time: 5 min.

Ingredients, 2–3 servings

6 eggs
1–2 spring onions, finely chopped
15–20 pieces of pickled jalapeños, finely chopped
1 small tomato, finely chopped
4 oz. (100 g) cheese, shredded
2 tablespoons (or more) butter for frying
salt and pepper

Instructions

Finely chop the spring onions, jalapeños and tomatoes. Fry in butter for 3 minutes on medium heat.

Beat the eggs and pour into a greased pan and scramble for 2 minutes before adding cheese and seasoning.

Serving suggestion: Avocados, lettuce and some dressing.
