Low-Carb Frittata with Fresh Spinach

Popeye wasn’t wrong! Spinach makes for a great low-carb start of the day. An amazingly nutritious breakfast with eggs, sausage or bacon and vegetables!
Frittata
Difficulty: Easy
Cooking time: 35 min.
Preparation time: 5 min.

Ingredients, 2–3 servings

8 eggs
1 cup (240 ml) heavy whipping cream
½ lb. (225 g) fresh spinach
5 oz. (150 g) diced bacon or chorizo
5 oz. (150 g) shredded cheese (cheddar or mozarella)
salt and pepper to taste
1–2 tablespoons butter for frying
fresh herbs, optional

Instructions

Preheat the oven to 350°F (175°C).

Fry the bacon in butter until crispy. Add the spinach.

Whisk the eggs and cream together and pour into a baking dish, greased with butter.

Add the bacon, spinach and cheese on top and place in the middle of the oven. Bake for 25–30 minutes.

Serving suggestion: Shredded green or red cabbage with a homemade dressing.
