Ingredients, 4 servings
4 leg quarters
8 oz. (200 g) shredded cheese
1½ cups (300 ml) heavy whipping cream or full-fat sour cream
10 oz. (300 g) frozen cauliflower florets (or fresh)
4 oz. cherry tomatoes
2 tablespoons green pesto (check carb contents)
½ lemon, the juice
3 tablespoons butter
Preheat the oven to 400°F (200°C).
Mix together cream or sour cream, pesto, lemon juice and salt and pepper to taste.
Cut the chicken leg quarters into two pieces each and fry in butter in a pan until turning a nice golden brown color.
Place the chicken in a baking dish and pour in the mixture.
Chop the leek and the cherry tomatoes, and place with the cauliflower on top of the chicken.
Sprinkle cheese on top and bake in the middle of the oven for at least 30 minutes.
