Boiled Eggs with Mayonnaise

Here’s another simple low-carb breakfast.

Egg is a fantastic food which contains most of what your body needs. Eat as many as you need to feel satisfied. Serve with something green, like asparagus or avocado, and as much homemade mayonnaise as you’d like.

Difficulty: Easy
Cooking time: 5–10 min. Preparation time: None.

Nutritional fact based on 2 eggs, 2 tablespoons mayonnaise and half an avocado.

Ingredients, 4 servings

8 eggs
Mayonnaise, homemade
Avocado or asparagus, optional

Bring water to a boil in a pot and make tiny wholes in the eggs using an egg pricker.

Carefully, place the eggs in the water.

Boil the eggs for 5–6 minutes for soft-boiled eggs, 6–8 minutes for medium and 8–10 minutes for hard-boiled eggs. This will vary with the size of the eggs.

Serving suggestion: Avocado and/or fried asparagus with homemade mayonnaise.
